Caramel Phirni

Ingredients:

  1. 50g ground rice (washed) 
  2. 500g Naturals Malai Ice Cream
  3. 100g sugar(caramel) 
  4. 5g mix dry fruits 
  5. Fresh fruits (for garnish) 

Process:

  • Put Naturals Malai Ice Cream in a thick bottom saucepan over medium heat. 
  • Mix in ground rice and stir continuously. Keep stirring while bringing it to a boil. 
  • Meanwhile, add sugar and a couple of spoons of water over medium heat in another non-stick pan. 
  • Allow the sugar to dissolve and bring it to a boil. Let the mixture caramelize and wait for it to turn dark brown. 
  • Do not stir, just swirl the pan. Remove it from the heat as soon as the caramel is dark in colour. 
  • Carefully pour the caramel mixture into the rice and Naturals Malai Ice Cream mixture; be careful as this mixture will bubble violently. 
  • -Keep whisking constantly, and simmer until any lumps have dissolved and the mixture is smooth. By now, the Phirni mixture will be creamy and thick. 
  • Turn off the heat and let the mixture cool at room temperature. 
  • Once cooled, set the Phirni in an individual serving glass and let it cool in the fridge for 2-3 hours. Garnish with pistachios and fresh fruits.
