That is why February is such a significant time for us. The long wait is finally over, the harvest is bountiful, and the Naturals Berry Festival has arrived.
We spend the entire year tracking crops and weather patterns, watching for the earth to offer up its sweetest gifts. It is a process that requires patience, but the result is a collection of ice creams that bring the honest taste of the harvest straight to your spoon.
Catching the Perfect Moment
There is a specific, fleeting window of time in a fruit’s life that matters most to us. We unofficially call it the righteous ripe stage. It is that precise moment when the berry is heavy with nectar, soft to the touch, and bursting with natural sugar. Catching this moment requires distinct timing and a bit of obsession.
Because we are willing to wait for this peak perfection, we never need to rely on shortcuts. Our famous three-ingredient recipe of milk, sugar, and fruit works only because the fruit itself does all the heavy lifting. When you take a bite, you are not tasting a laboratory formula; you are tasting the honest result of nature’s timing. The texture is light and the taste is unmistakable because we simply let the ingredients speak for themselves.
Chasing the Season Globally
To curate this festival, we follow the winter season across the map, sourcing each berry from the region where it thrives best. Geography plays a massive role in flavour, and we refuse to compromise on origin.
Our journey takes us to the USA for Blueberries. Unlike the dry, small varieties often found in supermarkets, these are deep indigo gems possessing a lush, rounded sweetness. For those who prefer a livelier profile, we turn to Serbia for our Raspberries. The specific climate there imparts a sharp, tangy zing to the fruit that cuts beautifully through the creaminess of the milk. We also look to Poland for Black Currants, where the berries develop an intense, earthy richness that gives the ice cream a sophisticated depth you simply cannot find elsewhere.
Treasures of the Indian Winter
While we chase the best harvests globally, we are equally captivated by the treasures emerging from our own soil during the Indian winter. The local harvest produces some of the most distinct berries in the world right now.
The rich fields of Uttar Pradesh are currently offering us Gooseberries, popularly known as Amla. These fruits provide a clean, tart punch that is incredibly refreshing and serves as a perfect palate cleanser. Closer to home in Maharashtra, the Mulberry harvest is in full swing. Since these are notoriously delicate, we handle them with extreme care to preserve their soft, jammy texture. Finally, we bring an exotic flair to the festival with the Cranberry. Known for their bold, ruby-red hue and unmistakable zest, these berries offer a sharp, tangy burst that perfectly complements our creamy textures.

We hold the Berry Festival between January and March simply because nature dictates it. It is a fleeting season, but that is precisely what makes it so special. We invite you to visit us from the end of January to the first week of March to taste why it’s absolutely worth the wait.
