Ingredients:
- 50g ground rice (washed)Â
- 500g Naturals Malai Ice Cream
- 100g sugar(caramel)Â
- 5g mix dry fruitsÂ
- Fresh fruits (for garnish)Â
Process:
- Put Naturals Malai Ice Cream in a thick bottom saucepan over medium heat.Â
- Mix in ground rice and stir continuously. Keep stirring while bringing it to a boil.Â
- Meanwhile, add sugar and a couple of spoons of water over medium heat in another non-stick pan.Â
- Allow the sugar to dissolve and bring it to a boil. Let the mixture caramelize and wait for it to turn dark brown.Â
- Do not stir, just swirl the pan. Remove it from the heat as soon as the caramel is dark in colour.Â
- Carefully pour the caramel mixture into the rice and Naturals Malai Ice Cream mixture; be careful as this mixture will bubble violently.Â
- -Keep whisking constantly, and simmer until any lumps have dissolved and the mixture is smooth. By now, the Phirni mixture will be creamy and thick.Â
- Turn off the heat and let the mixture cool at room temperature.Â
- Once cooled, set the Phirni in an individual serving glass and let it cool in the fridge for 2-3 hours. Garnish with pistachios and fresh fruits.Â
